For the Sauce
1 small cucumber diced (I peeled mine, it’s optional)

1-2 small garlic cloves (you can skip if you want to but this actually adds a great taste)

7 soaked almonds (you can take off the skins for a smoother looking soup)

1/2 a slice of multigrain bread (I used the last, crusty one)

150 ml almond/regular milk
3-4 ice cubes
Salt and pepper to taste
Garnish - 3-4 green grapes

200 grams grated carrot
500 ml milk
75 grams grated paneer
Stevia to sweeten
2.5 tsp ghee
1/2 tsp cardamom powder
4-5 almonds, slivered
Method
Method:
- Bring the milk to a boil.
- Add in the carrots and stevia. Cook until half the milk evaporates.
- Add in the grated paneer and cook until the remaining milk completely evaporates.
- Add in the ghee, cook until moisture completely evaporates.
- Mix in the cardamom powder, and serve topped with some slivered almonds. ❤️
