SWEET CORN AND SPROUTS KOSAMBARI

Ingredients (makes 1 large/2 medium servings)

For the Sauce
1 small cucumber diced (I peeled mine, it’s optional)

7-8 medium sized green grapes

1-2 small garlic cloves (you can skip if you want to but this actually adds a great taste)

7 soaked almonds (you can take off the skins for a smoother looking soup)

1/2 a slice of multigrain bread (I used the last, crusty one)

150 ml almond/regular milk
3-4 ice cubes
Salt and pepper to taste
Garnish - 3-4 green grapes
1-1.5 tsp

1 cup steamed green mung spouts
Seeds of 1 pomegranate
1 grated carrot
1 chopped green chilli
2 tbsp grated coconut
Juice of 1/2 a lemon
Salt to taste
For the tadka
2 tsp light olive oil
1 tsp mustard seeds
1 dry red chilli
5-6 Curry leaves
Method
Method:
- Mix together all ingredients except the ones listed for tadka.
- For the tadka, add in the mustard seeds, chilli and curry leaves to smoking hot oil.
- Mix everything together and dig in!
