HIGH PROTEIN RED SAUCE PASTA

Ingredients (makes 1 large/2 medium servings)
Ingredients (serves two)
1 tbsp chopped garlic
1 chopped onion
200 grams chicken breast OR tofu or paneer, cubed
2 tsp Chilli powder
1 tsp Oregano/ranch seasoning
Salt to taste
1 tbsp Olive oil
2 tsp Grated cheese
80 grams Cooked pasta of choice
For the sauce
1 red bell pepper, cut into big slices
1 halved tomato
4 cloves of garlic
4 cashew nut
30 grams paneer
50 ml almond milk
1/2 chicken/veggie stock cube
1 tsp olive oil
Method
Method:
- For the sauce, roast the tomato, bell pepper and garlic in oil until charred on all sides.
- Blend into a fine paste with remaining sauce ingredients.
- Sauté chopped garlic and onion in olive oil until golden brown.
- Add in chicken cubes and seasoning powders and sear until golden brown.
- Add in the sauce with a little water, bring to a simmer.
- Sprinkle in cheese, add the cooked pasta, mix well and serve hot!
