EGGLESS CHEESY FRENCH TOAST

Ingredients (makes 1 large/2 medium servings)

For the Sauce
1 small cucumber diced (I peeled mine, it’s optional)

7-8 medium sized green grapes

1-2 small garlic cloves (you can skip if you want to but this actually adds a great taste)

7 soaked almonds (you can take off the skins for a smoother looking soup)

1/2 a slice of multigrain bread (I used the last, crusty one)

150 ml almond/regular milk
3-4 ice cubes
Salt and pepper to taste
Garnish - 3-4 green grapes

30 grams yellow mung dal, soaked for 2 hours
1/2 tsp chilli powder
1 pinch hing
1 pinch garlic powder
Salt to taste
2 slices of multigrain bread
1 tsp ghee
Toppings
1 tbsp Finely diced carrot
1 tsp finely chopped chilli
Few kernels of sweet corn
Finely shredded spinach leaves
1/2 cheese slice, broken or 1 tbsp grated cheese
Method
Method:
- Blend the soaked mung dal with a few spoons of water to form a thick paste.
- Add in the flavourings and mix well.
- Add ghee into a hot non stick pan.
- Place the slice of bread onto the pan.
- Spread two spoons of the Mund dal mixture on top of the bread.
- Add all toppings except cheese.
- Flip the toast over and cook for 30 seconds.
- Flip it back, add the cheese, cover with a lid until the cheese melts.
- Remove the toast, slice, and serve hot, with/without ketchup! 🤤❤️
