LOADED LOW CALORIE CREPES
Super Healthy, Loaded, Low Calorie Crêpes. Eggless, sugar-free and gluten free. High in fibre, low in calories and just SO GOOD. Try it out and let me know what you think! ❤️🤗

Ingredients (makes 1 large/2 medium servings)

For the Sauce
1 small cucumber diced (I peeled mine, it’s optional)

7-8 medium sized green grapes

1-2 small garlic cloves (you can skip if you want to but this actually adds a great taste)

7 soaked almonds (you can take off the skins for a smoother looking soup)

1/2 a slice of multigrain bread (I used the last, crusty one)
2 tsp
150 ml almond/regular milk
3-4 ice cubes
Salt and pepper to taste
Garnish - 3-4 green grapes

Dry ingredients - to blend
3 tbsp oats
6-7 almonds
2 tbsp Jowar or any other miller flour
1 pinch salt
1/2 tsp stevia or monk fruit powder
1/2 tsp baking powder
Wet ingredients - to whisk
3 tbsp yoghurt (vegan option - peanut/ coconut curd)
100 ml almond milk
Few drops of vanilla essence
Toppings
Peanut butter
Whipped ricotta (vegan option - coconut curd)
Fresh strawberry compote (cook fresh strawberries with stevia and water)
Fruits of your choice (apple, papaya, strawberry, mango)
Slivered nuts (I used pistachios)
Dried berries (cranberry, blueberry)
Seed trail mix (pumpkin seeds, sunflower seeds, flax seeds, sesame seeds)
Method
Method:
- Blend all dry ingredients to a fine powder.
- Whisk wet ingredients.
- Add dry to wet and mix well. Batter should be very thin.
- Pour a ladle of the batter onto a hot non stick pan brushed with butter. Swirl the batter all around.
- Cook until bubbles start forming and the base is browned.
- Flip and cook the other side.
- Garnish with your favourite toppings and ENJOY! ❤️
