HIGH PROTEIN VEG BOWL

Ingredients (makes 1 large/2 medium servings)
Ingredients
For the stir fry
50 grams Paneer or tofu cubes
1/3 cup Mixed sprouts
1 whole Carrot, small cubes
1/3 cup Beans chopped
1/4 cup Fresh or frozen green peas
5-6 leaves Amaranth or spinach leaves
2 numbers Green chilli chopped
4-5 cloves, Garlic chopped
1/2 tsp Red chilli powder/sauce
Salt to taste
1 tbsp Olive oil
1 tsp Mixed seeds (pumpkin, sunflower, flax and sesame)
For the coconut coriander sauce
1/3 bunch coriander leaves
1 green chilli
1 garlic clove
1 tbsp coconut milk
1/2 tsp olive oil
1 tbsp warm water
Juice of half a lime
Salt and sugar to taste
Simply blend all ingredients together to make a smooth sauce.
For spicy mayo
1 tsp regular mayonnaise
1/2 tsp chilli powder/red chilli sauce
1 tsp thick curd
A few drops of honey
Simply mix all ingredients together.

Method:
- Make the sauces and keep aside.
- Heat olive oil in a pan and add the garlic and chilli.
- Add carrot, beans, peas and sprouts and sauté with a little salt until the beans and carrot become a little soft.
- Next add in the Amarnath/spinach leaves and paneer/tofu, season with chilli powder/sauce and salt and cook for a few minutes until done.
- Add the stir fry into a bowl, top with some coriander sauce and spicy mayo, sprinkle with the seeds and DIG IN. ❤️
