CREAMY CASHEW CORIANDER CHICKEN

Ingredients (makes 1 large/2 medium servings)

450 grams Boneless chicken cubes
Salt to taste
3-4 tbsp Thick coconut milk
1 tsp Ghee
Juice of half a lime
1 - 2 pieces Crushed roasted cashew
For the paste
Half a bunch of coriander leaves (with stem and roots)
3-4 green chillies
3 garlic cloves
3 shallots/1/2 an onion
6 cashew nuts
2 tbsp Warm water
Method
Method:
- Make the paste with the mentioned ingredients.
- Add it to the chicken with ghee and salt. Mix well.
- Cook on a medium flame for 10 minutes.
- Add the coconut milk, mix well and cook for another 10 minutes.
- Finish with lime juice and garnish with the crushed roasted cashew.
- Serve hot with some steamed rice or bread. 😋
