HIGH PROTEIN CREAMY PINK SAUCE PASTA

Ingredients (makes 1 large/2 medium servings)

1 tsp ghee
4-5 shallots / 1 onion roughly diced
6-7 garlic cloves
3-4 red chilli (fresh or dry - both work)
3 medium sized beetroot, cubed
1 cup Almond milk (can use regular milk)
1/2 stock cube
75 grams paneer or tofu
7-8 almonds
Salt, pepper and oregano to taste

Method
Method:
- Sauté garlic, shallots, chilli in ghee till golden.
- Add the beetroot, mix well and add half the milk.
- Cover and cook until beetroot softens.
- Blend into a fine purée with almonds, paneer, stock cube, salt and remaining milk.
- Mix with cooked pasta in a pan over low heat. Add some pasta water to this to make the sauce a little glossy.
- Season with salt and pepper, sprinkle some oregano and dig in!
