HIGH PROTEIN QUINOA FRIED RICE
380 Kcal with 35 g of Protein

Ingredients (makes 1 large/2 medium servings)

40 grams Quinoa
100 ml Boiling water
70 grams Prawns - 70 grams
30 grams Paneer cubes (you can use a total of 100 grams paneer and skip the prawns for a veg version)
30 grams Sliced mushroom
30 grams Carrot, small cubes
50 grams Sweet corn + green peas
1 small each Red and yellow bell pepper, small dice
1 tsp Ginger chopped
1 tsp Garlic chopped
1 tbsp Spring onion whites chopped
3-4 Sliced green chilli
Spring onion greens chopped for garnish
1 tsp Olive oil
1 tsp (optional) Butter
For the stir fry sauce, mix together
1.5 tsp dark soy
1 tsp light soy
1.5 tsp oyster sauce
Salt and pepper to taste
Few drops vinegar
1 tsp sweet chilli sauce
Method
Method:
- Sauté ginger, garlic, spring onion whites and green chilli in olive oil.
- Add mushroom, sweet corn, peas and carrots and sauté for a few minutes.
- Add the prawns, bell pepper and paneer.
- Mix in the stir fry sauce and cook on high.
- Add the quinoa, boiling water and butter.
- Cover and cook until the quinoa is completely done (sprouts appear).
- Season with more salt and pepper if necessary and serve hot, garnished with spring onion greens.
