EASY POTATO MASALA

Ingredients (makes 1 large/2 medium servings)

For the Sauce
1 small cucumber diced (I peeled mine, it’s optional)

7-8 medium sized green grapes

1-2 small garlic cloves (you can skip if you want to but this actually adds a great taste)

7 soaked almonds (you can take off the skins for a smoother looking soup)

1/2 a slice of multigrain bread (I used the last, crusty one)
2 tsp
150 ml almond/regular milk
3-4 ice cubes
Salt and pepper to taste
Garnish - 3-4 green grapes
1-1.5 tsp

Method:
- Pressure cook 3 medium potatoes for 2 whistles until soft.
- Peel and cube roughly.
- Into one tsp coconut oil, add half a tap mustard seeds and let them splutter.
- Add in 3-4 slit green chillies, 5 curry leaves and 1 sliced onion.
- Sauté for a few min, add in one large cubes carrot.
- Add a pinch of turmeric powder, salt and a cup of water. Cover and let it come to a simmer.
- Add in the cubes of cooked potato. Mash some of it up.
- Add salt and water as necessary, cover and cook for a few more minutes.
- Serve with Dosa, chapati or bread! ❤️
