HEALTHY-ISH SCHEZWAN CHICKEN
Chilli Chicken is LIFE but this Schezwan Chicken just gave it some serious competition. 🤤 Sweet, spicy, tangy, AND super easy. This entire dish was ready in less than half an hour! Also no refined flour batter, no deep frying, and no ketchup so it’s as healthy as I could make it. But still tastes yummaaazing. Try it out!

Ingredients (makes 1 large/2 medium servings)

250 grams cubed chicken breast, season with salt, pepper, 1 tsp garlic powder and 1 tbsp corn flour
1 tbsp chopped garlic
1 tsp ginger garlic paste
1 diced onion
1 cup diced bell pepper
3-4 slit green chilli
1 tsp soy sauce
1 tsp oyster sauce
Fine paste of one tomato and 5 dry red chilli, and 2 tbsp water
1/2 cup Water
2-3 tbsp olive oil
Salt and sugar to taste
Method
Method:
- Shallow fry chicken till golden brown.
- Remove the chicken and in the same pan, add garlic, cashew, chilli, ginger garlic paste, onion, bell pepper, a little salt and sauté for a few minutes.
- Remove, and add the tomato-chilli paste.
- Add in the sauce, salt, sugar and water. Simmer until the raw flavour goes and it thickens a bit.
- Add the chicken and sautéed veggies back in, stir well and that’s it! Enjoy it hot with rice, noodles, roti or a slice of multigrain bread like I did.
