POPCORN AND MAKHANA ROCKY ROAD BARS

Ingredients (makes 1 large/2 medium servings)

For the Sauce
1 small cucumber diced (I peeled mine, it’s optional)

7-8 medium sized green grapes
50 g
1-2 small garlic cloves (you can skip if you want to but this actually adds a great taste)

7 soaked almonds (you can take off the skins for a smoother looking soup)
1/2
1/2 a slice of multigrain bread (I used the last, crusty one)
2 tsp
150 ml almond/regular milk
3-4 ice cubes
Salt and pepper to taste
Garnish - 3-4 green grapes

Ingredients (makes 16 servings of roughly 50 grams each)
1 bar of sugar free dark chocolate, chopped roughly
1 cup dry roasted Makhana
1/2 cup salted popcorn
50 grams assorted chopped roasted nuts (I used almonds, pistachio and cashew)
40 grams dried berries (I used dried cranberries, blueberries, strawberries and cherries)
2-3 sugar free digestive cookies, crushed
For garnishing
1 tsp peanut butter mixed with 1 Tbsp Greek yoghurt and some stevia/honey
2 tsp mixed seeds (sunflower, pumpkin, flax, sesame)
Method
Method:
- Keep aside 3 Tbsp of the chopped chocolate and melt the rest in the microwave or over a water bath.
- Mix in the nuts, makhana, popcorn, berries, cookies and remaining chopped chocolate.
- Spread this as evenly as you can on a a flat surface wrapped with silver foil/baking parchment (I actually covered my chopping board with foil).
- Garnish with a drizzle of the peanut butter-yogurt mixture and seeds.
- Chill for a few hours to set.
- Break into small (roughly 50 gram) bars and that’s it!Serve it for your next dinner party, pack it in cute mason jars and gift your friends and family, or simply stash this in your fridge and enjoy one bar a day! ❤️
