COCONUT PRAWN CURRY

Ingredients (makes 1 large/2 medium servings)

250 grams Cleaned and deveined prawns
1 Onion, sliced
1 Tomato, sliced
1 pinch Turmeric powder
Salt to taste
50 ml Coconut milk
100 ml Water
1 Bay leaf
1.5 tsp Ghee
4 pieces Broken cashew
For the rice
1 cup Organic, red rice - I used RAJAMUDI Rice
3 cups Water
For the green paste-
1/2 inch piece Ginger
Garlic - 4-5 cloves
4-5 no Green chilli
1/2 bunch Coriander
2 tbsp Water
Method
Method:
- Wash and soak red rice for half an hour.
- Pressure cook with the water for 3 whistles and set aside.
- Make a green paste with the mentioned ingredients.
- Heat 1 tsp ghee in a pan, add in the bay leaf.
- Add in sliced onion, cook for a few minutes.
- Add in the tomato, turmeric powder and sauté until the raw flavour goes.
- Add in the green paste, prawns, water and coconut milk.
- Season with salt, and simmer for 5 minutes.
- Fry the cashew in 1/2 tsp ghee and mix it into the curry.
- Serve it hot with rice. ❤️
