LOW CARB CHICKEN AND VEG STIR FRY

Ingredients (makes 1 large/2 medium servings)

Ingredients
1 tbsp chopped garlic
1 sliced onion
2-3 slit green chilli
1 bowl of sliced veg - I used 1/2 a sliced cabbage and 2-3 carrot ( you can use beans, mushroom, sweet corn, baby corn, cauliflower, broccoli, zucchini etc)
1 tsp soy sauce
2 tsp chilli sauce/gochujang/chilli oil
Salt and pepper
1 tsp olive oil
200 g cubed protein of choice - i used boneless chicken breast, you can use tofu/paneer/fish or even chickpeas - marinated with some salt, chilli powder/sauce, garlic powder and olive oil
1 sliced cucumber
1-2 tsp kewpie/regular mayo to serve (got this Kewpie mayo from Amazon - it’s Japanese mayo, tastes YUM but is high in calories so use in moderation)
