ORANGE ROAST CHICKEN AND VEG BOWL

Ingredients (makes 1 large/2 medium servings)
Ingredients
200 grams chicken breast cubed
1/2 cup broccoli, cut into florets
1/2 cup carrot, cut into batons
1/2cup pumpkin, cut into batons
Seasoning mix for chicken -
1 tsp garlic powder
1 tsp chilli powder
1 tsp Italian/ranch seasoning
1 tsp olive oil
Salt to taste
For the dressing -
Juice of half an orange
1 tsp olive oil
Salt, pepper, sweetener/honey to taste
For garnish
1 tsp mixed seeds (pumpkin/sunflower)
Method
Method:
- Steam the veg until they ate half cooked. I microwaved them for 2 mins on high.
- Mix together chicken and steamed veg with the seasoning and air fry for 25 minutes on high.
- Mix all ingredients listed for salad dressing.
- Drizzle over the air fried chicken and veg, and garnish with a sprinkling of pumpkin/sunflower seeds.
