HEARTY, CREAMY CHICKEN STEW
300 Calories with 33 Grams of Protein

Ingredients (makes 1 large/2 medium servings)

1 small onion, chopped
6-7 garlic cloves, Chopped
1 large carrot, chopped
1/2 - big red and yellow bell pepper each, chopped
1 big tomato, chopped
250 grams Chicken breast boneless cubes
Large handful of spinach leaves
2 tsp Chilli powder
2 tsp Ranch seasoning
Salt to taste
2 tsp ghee
1/2 cup coconut/normal milk+ 1/2 cup water
1 cube cheese
Oregano as per taste
Method
Method:
- Sauté onion and garlic in ghee until translucent.
- Add the carrot, tomato and bell peppers and sauté on high.
- Add the chicken with the seasoning and let it cook.
- Toss in the spinach leaves, mix well, and add the milk + water and cheese.
- Let it simmer and thicken slightly. Top with oregano and serve hot!
