CHICKEN AND VEG SKILLET WITH AVOCADO SPINACH SAUCE

Ingredients (makes 1 large/2 medium servings)
Ingredients
2 tsp Olive oil
1 tsp Garlic - green chilli paste
200 grams Boneless chicken breast cubes / paneer cubes
2 cups Assorted sliced mixed veg (I used a mix of purple cabbage, bell peppers, sugar snap peas, green peas and sweet corn)
1 tsp Onion powder
2 tsp Garlic powder
Salt to taste
1 tsp Hemp trail mix
For the sauce, blend together
1 avocado
1 handful of spinach
1 green chilli
3-5 cashew nut
1 tbsp nutritional yeast
1 tsp olive oil
1/2 cup warm water
Juice of half a lime
Salt to taste
Method
Method:
- Sauté chilli garlic paste in olive oil. Add the chicken/paneer, some salt and cook until slightly browned.
- Remove and set aside, and in the same pan, add in the veggies.
- Season with onion powder, garlic powder and salt.
- Add the chicken back and mix well.
- Top with the sauce, sprinkle with hemp trail mix and dig in!
