CREAMY LOW CARB MUSHROOM NOODLES
290 KCal with 18 g of protein

Ingredients (makes 1 large/2 medium servings)
Ingredients
1 tsp butter/olive oil
4-5 shallots / 1 onion finely chopped
6-7 garlic finely chopped
3-4 red chilli (fresh or dry - both work) finely chopped
1.5 cups assorted sliced mushrooms ( I used a mix of button and oyster mushrooms)
Handful of spinach leaves
1 tsp soy sauce
30 grams soaked chickpeas
45 grams paneer or tofu
3/4 cup almond/oat/regular milk
1.5 tsp nutritional yeast (or grated cheese)
1/2 a stock cube (optional)
1 packer @urbanplatter.in shirataki noodles
Salt, pepper, and Italian seasoning to taste
Method
Method:
- Sauté garlic, shallots, chilli in butter till golden.
- Add the mushroom and some salt and sauté on high heat until cooked.
- Remove 1/3rd of this mixture from heat and blend it with chickpeas, paneer, nutritional yeast, stock cube and milk.
- Next add the spinach, soy sauce and salt to the remaining sautéed mushroom.
- Add in the creamy mushroom sauce to the pan, with drained and rinsed shirataki noodles.
- Add some water if necessary, season and mix well.
- Serve hot!
