HIGH PROTEIN GOCHUJANG RICE BOWL
360 Kcal with 20 g of Protein

Ingredients (makes 1 large/2 medium servings)

70 grams Cooked rice of choice
50 grams Cooked and shelled edamame or peas/ chickpeas
40 grams Thin slices of paneer, grilled on a tawa with 1 tsp olive oil
50 grams Sliced carrots sautéed with 1 tsp butter, 1 tsp soy sauce, 1 tsp garlic paste/powder, sprinkle of sugar and salt
30 grams Sliced cucumber
Chopped chilli and sesame seeds to garnish
For the Gochujang sauce, mix together
2 tsp Gochujang
1 tsp creamy peanut butter
1 tbsp Greek yoghurt/mayo
2 tbsp warm water
Salt to taste

Method:
- Simply add the veg, paneer and rice into a bowl, top with the sauce, garnish with chilli and sesame, mix well and enjoy!
- Feel free to add in sautéed spinach, mushrooms, and a fried egg on top. ❤️
