PEANUT BUTTER MIX VEG

Ingredients (makes 1 large/2 medium servings)

1 tbsp Ginger garlic paste
1 small Sliced onion
1 large Sliced tomato
2 Slit green chilli
80 grams Diced mushrooms
40 grams Cubed paneer/tofu
130 g Green Mung sprouts
1 tsp Olive oil
1 tsp chilli powder
1/2 tsp turmeric powder
1 tsp garam masala
1 tsp coriander powder
Peanut butter unsweetened 1 tbsp
1 tbsp Kasuri methi
Salt and water as required
Method
Method:
- Sauté onion, chilli, ginger garlic paste in in olive oil until golden brown.
- Mix in all the tomato and sauté on high heat for a few minutes until the tomatoes completely softenMix in all the tomato and sauté on high heat for a few minutes until the tomatoes completely soften
- Add the spices, salt, a little water and cook it for a few minutes.
- Add the sprouts, mushroom and cook until mushroom releases water.
- Mix in peanut butter, add a little more water to form a creamy thick gravy .
- Add the paneer into the mix, season with salt and sugar.
- Finally mix in the Kasuri methi.
- Mix it all together and serve it up HOT. ❤️
